The Christmas season is fast approaching and you must be busy preparing for it. Have you put up your decors and set up your Christmas tree? Are there wonderful colorful lights lining your houses, or are these glittering lights spread out into the garden to bring sparkle tonight? You must still be buying gifts for someone special and adding more to your list of whom and what to buy! Hopefully, you are well into it, and that you would still get to enjoy your Christmas to the fullest. What do you intend to prepare for Christmas? In our case, it's food galore to the max! We eat anything and everything. We've got ham, delightfully semi-fried to be eaten as is or you can have it as sandwich with mayo, cheese and cabbage leaf. Then we have chicken, either roasted or the native fried chicken we have here that we call as ‘lechon' which is just simply deeply fried chicken with a lot of liver sauce. Delicious! Speaking of ‘lechon' we can have that, too; it's actually known as suckling pig which is that pig or piglet deeply fried under slow fire or heat so its skin would be the crispiest and most tender to the last bite! It goes well with its own sauce made from liver, herbs and spices. We also have other pork foods like grilled pork chops, pork barbecue and hamburgers! Surely, there would be my all time favorite fruit salad cold frozen and would just be right to eat when it slowly melts into your mouth! We would also have spaghetti with plenty of tomato sauce and meat balls, then adding plenty of cheese to make it a lot tastier. We would have chocolate cake, ice cream, fruit juices, sodas and some health drinks, too. There would also be native delicacies like ube or yam jam, coconut cupcakes, fruit tarts made from mango, pineapple, orange and apples. We might consider adding in some home- made pizza with plenty of ham, pineapple, mushroom, green and red pepper and hot sauce to go with it! Yum, yum yummy! We would not forget about fresh fruits like seedless grapes, apples, oranges, melon, strawberries and mangoes. We would have wheat bread, cinnamon bread and toasted bread for everybody to choose. We would make our favorite dips like pesto, sweet and sour salsa, thousand islands and the old reliable catsup. We would have all kinds of chips, crackers, walnuts and cashew nuts and a lot of hard candies. Everything sweet and sugary! Just thinking about all these foods to have this Christmas makes me hungry. Okay, so you notice that these are all foods that add calories and make all of us fat! Whew! Then we just have to make some mental note to avoid that problem! Just like me, why not try going on a diet starting right now? Don't eat any of those foods yet; stick to crackers, water, light fruit juice, vegetable salads, fruits like banana and apples, and have small meals of fish, lean meat and chicken. Okay, you can starve yourself for about three days taking only water and crackers if you can. I am doing it, and I am slowly losing the extra calories. So by the time Christmas Eve comes, I'd be eating to my heart's content all these foods galore that we have prepared! Then when Christmas is over the next day, I'd go on a diet again, starve myself for three days and eat less till December 30. By the 31st, I'd be eating up again all these yummy foods! So that's basically it! Those are the foods we prepare for Christmas for a lot of years now. We do it only once a year for this special occasion. It's a time to share happiness, joy and food because it's Jesus' birthday! That is a big reason to celebrate and have all these foods!
